Processing
CHELCHELE IS BACK, AND WE ARE STOKED Banko Chelchele is a village in the Gedab district of the Gedeo Zone. The region’s high elevation, rich soil, and cool climate create ideal conditions for exceptional coffee. This lot is fermented anaerobically for 7-10 days in cold, pressurized tanks to a precise Brix level. The coffee is dried on raised beds to a moisture content of 11%. The result is intensely fruity and sweet, with luscious notes of blueberry, black plum, and sugar cookie.
