Processing
Cherry was floated to remove defects and pulped the same day. The coffee then fermented in its own mucilage for 48 hours — dry, no water added — before being fully washed. Jorge chose the washed route here to let the variety itself come forward. Drying happened in a covered marquesina under polisombra, a black shade netting stretched over the plastic roof to slow moisture loss. Rather than drying continuously, he rested the coffee for 24 hours at days 5, 9, and 13, stretching the full cycle to 15 days. The slower curve preserves aromatics and fruit character.
