Processing
In February 2017, Ledesma visited Diego Bermudez and he gave Ledesma 4 small Sudan Rume tree seeds Bermudez brought from a trip to Finca Pirineos. (winner of several cup of excellence competitions). This coffee underwent anaerobic fermentation in tanks with a degassing valve for 60 hours. Then the cherries were solar dried for 36 hours, and went to a mechanical dryer until the ideal humidity. Finally, the coffee was left in Grainpro bags until stabilized.
