Processing
Picked as fully ripe cherries and floated to remove defects, this lot underwent a two-stage fermentation: 48 hours dry anaerobic in-cherry in sealed barrels, followed by 96 hours of fermentation after pulping. It's noted that at above 2,000 masl, the cooler temperatures slow microbial activity and result in a brighter and fruitier coffee.
