About this coffee
Miramar is situated in the rich area of the San Salvador Volcano, ideal for coffee production. The farm is 15.5 hectares, and is owned by Fernando Felipe Alfaro Castaneda. Fernando acquired Miramar from his father-in-law, Dr. Napoleón Diaz Nuila, in 2019, to begin producing exotic varietals to submit into competitions such as Cup of Excellence. After this coffee was carefully handpicked during the harvest, the cherries were delivered to the El Carmen mill. There, they were de-pulped to remove the external fruit, sent to a tank to naturally ferment for 6 – 8 hours, washed with clean water, and dispersed on clay patios to dry for 15 – 18 days. Once the moisture content reached 10.5%, the coffee was bagged and rested for 30 days before being hulled and prepared for export.
