Long-term buying gives that process substance: in Santa Barbara, Honduras, relationships with producers including Juan Angel and Irvin Izaguirre, Nelson Moreno, and Miguel Ortiz date to 2013. Its Michigan spaces extend the same point of view. The original Monroe Center café once housed roasting operations in its basement, while Fulton Street combines the current roastery, café, warehouse, offices, and training space inside a renovated 1930s body shop.
