The object
Shimmy separates microfines below 200 microns from a ground dose before brewing. That fixed threshold gives users of less-uniform grinders a repeatable way to reduce the smallest particles that can slow drawdown and muddy flavor separation.
The tool pairs naturally with pour-over and French press brewing, but sifting removes part of the weighed dose and adds a manual step. Recipes should therefore measure the retained coffee or account for the discarded fines when setting the brew ratio.
