The process utilizes ethyl acetate, a compound derived from fermented sugarcane molasses, to gently remove caffeine while preserving the coffee's inherent characteristics. The green coffee beans undergo a careful cycle of soaking and steaming in a sugarcane-based ethyl acetate solution.
