About this coffee

This Gesha selection, produced by Fabio Caballero Jr comes from his COE winning farm La Salvaje. His farm sits at 1820 MASL in a shaded forest where he grows Gesha, Pacamara, and SL-28. This Gesha lot was harvested form April-May 2025. This is our final release form Fabio this season and we are ending on a high note. This lot is very flavorful, with abundant fruits and bergamot florals. We are tasting raspberry, mango juice, strawberry and creamy florals. Fabio Caballero Jr. is a 5th generation coffee producer, working alongside his grandfather, Fabio Caballero. They began by planting Gesha and Java seeds from their COE winning farm, Finca San Francisco. The result has been amazing, which is evident in the cup as well as this year's Cup of Excellence results. We began working with Fabio last year and visited his farm earlier this season. We are very grateful to get a small portion of this lot to share. Cherries were picked at peak ripeness, with sugar content levels of 23 Brix. The cherries are then depulped and dry fermented for 48 hours in covered barrels at a controlled temperature. The seeds were then washed and dried on raised beds under shade for 25-30 days.
