About this coffee

Our evening companion proves that decaffeination doesn't mean compromise. We use the sugarcane method, where caffeine is drawn out with ethyl acetate derived from fermented sugarcane, then steamed away before the coffee is dried. We chose it over the alternatives because it leaves the coffee sweeter, and that sweetness carries all the way onto the espresso bar.
