The Hummingbird
About this coffee
This perfumed and delicate cup is a perfect expression of both the Geisha variety and the distinct terroir of Panama’s Volcán region. The dry fragrance opens with an intense floral bouquet, moving into dominant notes of gardenia and white rose the moment hot water hits the grounds. As the cup opens up, vibrant tropical aromas yield to a luscious ripe mango flavor, balanced by a vivid, sparkling acidity and a smooth, silky body resembling the structure of rosé wine. As it cools, the profile evolves into a complex, candy-like finish reminiscent of Turkish delight and citrus confections. Perched at 1,750 to 1,900 meters in Volcán, Chiriquí, the 180-hectare Flying Pumas estate is a regenerative sanctuary where specialty coffee and wild biodiversity live in harmony. Cherries ripen slowly under a canopy of 20+ native tree species in volcanic soil, cooled by the misty clouds of neighboring La Amistad Natural Park. Every lot is named after a wild neighbor that shares the land; the Hummingbird Lot honors the pollinators that signal floral abundance across the farm.
