Spyhouse builds its identity around translating a producer’s work clearly into the cup. The Minneapolis-born company began as a Whittier coffeehouse in 2000 and now pairs neighborhood café hospitality with roasting rooted in both sensory expression and technical control. Its sourcing looks closely at variety and processing method, using those variables to shape distinct cup profiles and guide farm-direct purchasing. The coffee range moves from approachable signature blends—medium, dark, organic, and decaf—to rotating single origins and Reserve Series releases with more pointed flavor profiles. A Gender Equity Project adds substance to the sourcing program: year-round offerings feature coffees from women producers, include an added gender-equity premium, and direct part of their proceeds to local women’s organizations.
