Maru treats process as part of the cup, pairing an analog-minded aesthetic with a deliberate approach to everyday quality. Its name comes from “San Ma Ru,” an old Korean expression meaning “mountaintop,” a reference to coffee grown at high altitude. All coffee is roasted at the brand’s Glassell Park roastery in Los Angeles, where selected offerings are developed around tasting notes that reveal each lot’s character. The coffee program favors movement over a fixed profile. Green coffee is sourced seasonally in small batches, then roasted, packed, and shipped in-house. The rotating selection is designed to cover a spectrum of flavors rather than settle into a generic standard. That attention to production also shapes the hospitality. The Arts District café was built around its roaster so guests could watch coffee move through each stage, while the Beverly Hills espresso bar narrows its menu to espresso-based drinks and location-specific signatures. The result is restrained but not austere: craft made visible, then folded into daily ritual.
