This decaffeinated lot is a blend of harvests from a small group of producers in San Agustín, Huila. In the cup we find a sweet and balanced profile of orange marmalade, dark chocolate, and strawberry.
Processing
Hand-picked at peak ripeness. Floated to further remove defects. Depulped. Dry fermented for 24 hours. Dried on shaded raised beds for 30 days. Decaffeinated with ethyl acetate.
