About this coffee
This is our first year working with the coffee from Mate Matiwos, and we are grateful for all of the love and intentionality that went into bringing this coffee to us. In the cup we find berries, tropical fruit, and bergamot.
Processing
Hand-picked at peak ripeness. Floated to remove defects. De-pulped as quickly as possible, intentionally leaving on a small amount of mucilage. Dried on shaded beds with mucilage intact until moisture content reaches ~10%.
