About this coffee
It has been remarkable to see the diversification of varieties cultivated in the Huila region over the last few years. Sidra is still rare in Colombia, but exploring different varieties has been instrumental in the elevated quality we have seen from these talented producers. In the cup we find soft botanicals, nectarine, and wildflower honey.
Processing
Hand-picked at peak ripeness. Floated to further remove defects. De-pulped on the day of harvest. Dry-fermented for 48 hours. Washed. Dried on raised beds until moisture content reaches 10.5%.
